🛒 INGREDIENTS
🥦 2 broccoli heads
🥚 8–10 eggs
🧅 2 white onions
🫒 A little oil, for sautéing
🧂 Salt and black pepper, to taste
👩🍳 INSTRUCTIONS
1. Cut the broccoli into florets and steam until tender. Let any excess moisture drain.
2. Slice the white onions into thin half-rings.
3. Heat a little oil in a skillet and sauté the onions until soft, translucent, and lightly golden.
4. Beat the eggs in a bowl with salt and black pepper.
5. Line a loaf pan with parchment paper, leaving enough overhang to lift the bake out later.
6. Add the cooked broccoli florets to the lined loaf pan.
7. Spread the sautéed onions evenly over the broccoli.
8. Pour the beaten eggs over the vegetables, allowing the egg mixture to fill the spaces between the florets.
9. Bake in a preheated oven at 350°F (180°C) for approximately 30 minutes, or until the eggs are completely set and the top is lightly golden.
10. Let cool slightly, then lift the bake out using the parchment paper.
11. Slice into thick portions and serve warm!
