🔪 BUTCHER CHECK:
Some butchers say mastering a hook for boning and trimming shows greater butchery skill. Others say using a hook is frustrating when their knife keeps hitting it.

🔥 AGREE OR DISAGREE? Does mastering a boning hook make you a more skilled butcher? 👇

Finding the angle is only the beginning—holding it through every stroke takes control. Start slow, feel where the bevel meets the steel, and follow that contact from heel to tip. Pick up speed only while you can keep the pressure light and the angle steady.

💡 BUTCHER WISDOM

Finding your honing angle starts with knowing the edge already on your knife.

Begin slowly and aim to match the existing edge bevel. Too flat, and you may miss the cutting edge. Too steep, and you can work directly against it. Keep the pressure light and check whether your knife cuts better before adding more strokes.

What helped you learn your honing angle—watching someone experienced, an angle guide, or practice and feel? 👇

🔪 BUTCHER CHECK:
Some butchers say if you still need an angle guide to sharpen your knife, you haven’t mastered sharpening. Others say a consistent working edge matters more than doing it freehand.

🔥 AGREE OR DISAGREE? Is an angle guide just for beginners—or does it deserve a place in an experienced butcher’s setup? 👇

💡 BUTCHER WISDOM

A sharp edge that feels right on fresh meat can feel different on chilled meat.

I’ve cut fresh meat in butcher shops and worked with chilled and partially frozen meat in the plant. Fresh meat can shift under the blade, while chilled meat tends to feel firmer. I judge the edge by how cleanly it cuts and how much pressure I need for the meat in front of me.

Do you sharpen your knife differently for fresh, chilled, or partially frozen meat? What works for you? 👇

Some butchers say a diamond stone, a ceramic rod, and a clicker make knife maintenance faster and easier.

AGREE OR DISAGREE? Does the clicker make a difference when your work knife starts losing its bite mid-shift? 👇

🔪 BUTCHER CHECK:
Some butchers say a toothy 1,000-grit finish is the best edge for a boning knife because it gives them the bite they want around bones and joints.

AGREE OR DISAGREE? Do you stop at 1,000 grit or go finer. Share your experience.👇

Many butchers hone without feeling the edge, just guessing with every stroke. One careless pass can do more harm than good. Slow down, keep the pressure light, and feel the edge from heel to tip.

STOP GUESSING. START FEELING.

💡 BUTCHER WISDOM

I used to sharpen my trimming knives at 14–18° and my boning knives at 18–25°.

For trimming, I wanted an edge that sliced with less pressure. For boning, I wanted an edge that held up better when I worked close to the bone. I judged both by how they cut after a few hours on the job.

Do you sharpen your trimming and boning knives at different angles? What works for you? 👇

🔪 BUTCHER CHECK:
Some butchers say a mesh apron and chainmail gloves make sense on a fast meat plant line, but wearing both in a retail butcher shop is overkill.

AGREE OR DISAGREE? If you’re boning the same cut in both places, does the slower pace change what protection you need? Share your experience. 👇
