Cooked vegetables are the only veggies on my family’s plates these days, so here is how I add some into the meal. Brown one pound of ground beef (or chicken). Add one can of black beans (drained), and one can of diced tomatoes (my can was super sized, so I only added half). Add one packet of taco seasoning or 2.5 TBSP homemade taco seasoning, an earlier reel shows my recipe, and let that cook down to coat. Add cheese if you would like. Pour 1 TBSP of oil onto a plate and dip your small flour tortillas into it coating the outside. Fill with browned beef mixture, fold in half, and put on baking sheet. Bake at 350° until tortillas and brown and crispy. Technically, everything is already cooked before the oven, so you can bake them as long as you would like, you don’t have to let them get crispy. My family liked to top these with salsa or avocado, but I just ate them plain.
