🐝 Chicken mock pot pie is perfection! My back is out and it was the perfect comfort food.

Power up 💪 your Chex mix with plant protein, fiber, and heart healthy fats in this very fall maple 🍁 apple 🍎 cinnamon snack mix!

1.5 cups GF rice Chex
0.5 cups dry roasted edamame
0.25 cups almonds
0.25 cups pecans
0.25 cups pepitas
0.5 cups crunchy dried apples, lightly chopped.
1.5 tsp avocado oil 5 tsp vanilla extract
1 tsp cinnamon
Pinch of sea salt

Preheat oven to 300 degrees. Line a baking sheet with parchment.

Mix dry ingredients - Chex through pepitas- in a large bowl. Mix oil, vanilla, cinnamon, and sea salt in a small bowl. Add cinnamon mix to large bowl & toss to coat.

Spread evenly onto the baking sheet. Bake at 300 for 10 minutes. Stir, return to the oven for another 5-8 minutes until nearly dry. The mix will crisp up once it cools.

Remove from oven, sprinkle apples on top, stir, and allow to cool. Portions into snack bags. This recipe makes four 2 oz servings. 🐝

Today’s lunch is inspired by the super summery salad we had a dinner last weekend at El Meson. Watermelon 🍉, cucumber 🥒, and Feta cheese with a Balsamic drizzle. Today I added blackberries and diced chicken. 😋 🥗 🐝
