Rich, moist, and wonderfully fudgy, these Chocolate Beet Muffins combine the natural sweetness of beets with deep chocolate flavor. Made without flour or dairy, they're a delicious, wholesome treat for breakfast, snacking, or dessert.
Ingredients:
1 cup cooked beets (170 g), cooled
½ cup creamy almond butter
2 large eggs
2 tablespoons avocado oil
1 teaspoon vanilla extract
½ cup unsweetened cacao powder (40 g)
¼ cup coconut sugar (40 g)
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
⅓ cup dark chocolate chips (optional)
Directions:
1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with 10 silicone or paper muffin liners.
2. Blend the Wet Ingredients: Add the cooked beets, almond butter, eggs, avocado oil, and vanilla extract to a food processor or high-speed blender. Blend until completely smooth and creamy.
3. Incorporate the Dry Ingredients: Add the cacao powder, coconut sugar, baking powder, baking soda, and salt. Blend until the mixture becomes a smooth, chocolatey batter.
4. Add Chocolate Chips: Gently fold in the dark chocolate chips, reserving a few to sprinkle over the tops if desired.
5. Fill the Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each approximately three-quarters full.
6. Bake: Place the muffin tin in the preheated oven and bake for 20–22 minutes, until the muffins are set and a toothpick inserted into the center comes out with a few moist crumbs.
7. Cool: Allow the muffins to rest in the tin for 5 minutes before transferring them to a wire rack to cool completely.
8. Serve and Store: Enjoy these muffins at room temperature or slightly chilled. Store leftovers in an airtight container in the refrigerator for up to one week.
