A full dining room proves people want the table. It says far less about whether they would follow you anywhere else.

New on the blog: when is a restaurant ready to become a hospitality brand? We looked for the answer in five recent moves. The Wolseley is taking its Piccadilly café into a New York hotel and members’ club, and Lyla opened four rooms upstairs. Contramar, HUMM and Brasserie Boulud each found a different answer, and one of them got smaller.

A hundred years on the Tiburon waterfront, only two owners, and a lot of locals who feel it belongs to them.

Renovating Sam’s meant staying faithful to that history while making it feel younger. The original art deco back bar was restored, blue terrazzo with brass inlay went down, and a big glass door finally connects the dining room to the deck. Forgotten dining rooms got white-washed rafters and vertical slat walls, with vintage photos of Sam’s on the walls.

You know it when you walk in. Before anyone has ordered, the room has already made its case.

New on the blog: what taste actually means for a restaurant, and why it might be the hardest thing for anyone to copy. We make the argument through three rooms of our own, from Delfina Restaurant in the Mission and Hi-Fi W**e Merced in Merced to the ch*****ne bar we designed for The Riddler SF .

Upwards of 100 cabins, Airstreams and RV spots, on a 25 acre bluff at the edge of Grand Staircase.

Yonder was designed to connect guests with a stark, stunning landscape without giving up the comforts. Vintage cars parked where an old drive-in used to be. Fire pits and open-air covers for breakfast. Modern cabins layered with vintage lights, board games and books, a nod to the town of Escalante.

Then a night full of stars, and a very good bed.

Now Ofland Escalante, Ofland Escalante.

Olive Juice opens today in San Francisco.

An all-day café, and the first one that is ours. We have spent years building rooms around other people’s concepts, working out what a brand wants to be and then making a space agree with it. Here the concept, the identity and the room were one conversation from the start.

Find us on the back patio at 354 Divisadero, Thursday to Sunday, 8am to 2pm.

How do you make a second location feel as special as the first?

Ingo’s first Phoenix spot drew its character from a beautiful curved building. The new downtown site was a new-build aluminum storefront with very little character to start from. We kept a mid-century thread running through every decision so the two felt related: soft lighting, earthen tiles, warm textured wood and mixed metals, with the brand colors worked in to keep the room bright and airy.

For two years a giant Monogram trunk wrapped a building on the Champs-Élysées, and the rumour grew with every month of scaffolding. Louis Vuitton was opening a hotel.

In January, Arnault settled it in a sentence. No hotel. Nobody will sleep there.

Meanwhile the cafés keep opening. Zara has one. So do Lacoste and LOEWE. Vuitton pours coffee on three continents, and in SoHo an eyewear brand now runs a fifty-seat restaurant with a Neapolitan chef in the kitchen.

There is a reason fashion keeps stopping at the café, and it is not budget.

Two bars can pour the same drink and be doing completely different jobs.

One wins the night. People cross town for it, photograph it, talk about it for a week. The other wins the decade. Nobody travels for it, and it is full on a wet Tuesday in February.

The briefs pull against each other, and only one of the two can actually be designed.

Signage is the only part of a project that is branding and interiors at the same time.

It has to read from across the street and from the next table, sit in its neighborhood without shouting, and still look right in five years, after the menu has changed twice.

Six of ours, all on glass.
