Chefs kept asking us for a pan that didn't exist. So we went to France and had one made.
Listening to chefs and going the distance to get them what they ask for is what JB Prince has always done. In fine dining, chefs plate small portions to order and don't want to waste product, so they need pans sized for very small amounts.
We started with a 0.75-quart, 12 cm saucepan from Mauviel. Then our friends at de Buyer in France made us a 9 cm saucepan in five-ply stainless steel, riveted, with cast iron handles. Tim calls it one of the best-made 9 cm saucepans you'd ever see.
In this episode of Tim's Tools of the Trade, Tim walks through the pans and the story behind them.

From the very first catalogue that Judy Prince created in her Brooklyn brownstone, to next week's opening in Chelsea Market, this is our story.
For nearly 50 years, JB Prince has served the culinary world, largely out of the public eye. On Monday, October 5, we open our doors at street level in Chelsea Market for the first time.
What won't change is the commitment Judy started this company with in 1977: finding the best kitchen tools for professional chefs. That commitment, and the values that have guided us ever since, are coming with us to Chelsea Market.
Watch the three-part docuseries about how we've grown over nearly 50 years as an integral part of the NYC culinary community. Find out: Who Is JB Prince?

Thursday night we were at Chelsea Market for the Anne Saxelby Legacy Fund Benefit. It was 130 of New York's best chefs, lining the halls, all there to honor Anne's work.

Anne Saxelby spent her career making sure the people who grew the food and the people who cooked it knew each other. The foundation she left behind keeps that work going.

Last night was our first time at the ASLF event. It served as a strong reminder of how strong the culinary community is in New York City. We caught up with old friends, made some new ones. It felt great to give a little back.

Our doors at Chelsea Market aren't open yet, but last night reminded us why we are excited to be a part of this.

Thank you to for having us.
A special thank you to our friends from for showing up at our table with delicious chocolate to share with the community!

We have big news to share at JB Prince! For nearly 50 years, we have served the culinary world, helping them find solutions in the kitchen with the finest kitchen tools on earth.
We've done this largely out of the public eye. For the past three decades, our showroom has been upstairs in a building on East 31st Street. It's a place we've heard called the culinary promised land.
This fall, we're bringing that same mission downtown, to share the world's finest kitchen tools from a new location, at the center of New York's food scene. This is a new chapter for JB Prince, for the first time serving the public at street level. We will do this while staying exactly who we have always been: the resource for anyone seeking the best solutions in the kitchen.
CEO Tim Mussig shares what's next for JB Prince. Link in bio to watch the full three-part documentary of our story.

Our tweezers are more than a small tool. They’re part of the JB Prince legacy of working with award-winning chefs to find tools that truly get the job done. In this episode of Tim’s Tools of the Trade, we tell that story.

Years ago, Michel Richard — one of the most celebrated chefs in America — came to us with a request. He had a beautiful open kitchen and rigorous standards for how his team plated food. He needed a tool his team could use confidently while on full display. We recommended the Global plating tongs, which we still sell today.

As fine dining evolved toward tighter plates and more intricate service, chefs told us the tongs were too bulky. So we went to work. After years of research with chefs, the result is the JB Prince line of tweezers, with our name on the body.

Tim walks through three styles from our full range: Straight, Offset, and Curved. What tool should he cover next? Drop it below.
