PRISMATIC COLOR COLLAPSE JELLY 🌈⚡✨

⭐ ADVANCED
⏰ 40 mins (+ chill time)
🍽️ Sculptural Jelly / Optical Dessert Art

🛒 Ingredients

Mango puree — electric orange
Passionfruit juice — bright citrus base
Raspberry puree — ruby red
Cyan natural coloring — cyan
Violet natural coloring — violet
Lime natural coloring — lime
Water
Sugar or honey
Gelatin or agar

🍳 Equipment

Tall geometric silicone mold
Small saucepan
Fine piping bags or droppers
Palette knife
Sharp knife

📖 Instructions

Prepare the mango, passionfruit, and raspberry jelly bases separately.

Divide the clear jelly into five portions and create the electric orange, cyan, violet, lime, and ruby tones.

Pour the colors as extremely thin geometric bands, directing every layer toward one tiny central point.

Alternate the angles with each layer so the bands appear to fold inward rather than simply stack.

Build the structure outward while keeping the center extremely concentrated and visually precise.

Chill partially between selected layers to prevent the colors from blending.

Finish with a thin crystal-clear outer layer and chill completely.

Unmold and cut into a clean sculptural form.

Rotate the jelly slowly under directional light—the colored architecture should appear to collapse toward the center and then visually reform from another angle.

💡 Pro Tips

The secret is geometry, not rainbow blending. Keep every color sharply separated.

Make the central convergence point extremely small.

Use different angles for each color band to create the optical illusion.

Keep the outer jelly highly transparent so light travels through the entire structure.

Avoid equal-width stripes; tapered bands create a much stronger “collapse” effect.

ℹ️ Serving Info

Serve chilled as a sculptural centerpiece. The main visual experience comes from rotating the jelly and watching the saturated color architecture shift around its tiny central point.

CHROMATIC RIBBON WHIRLPOOL 🌀💎🌈

⭐️⭐️⭐️⭐️⭐️ HARD
⏰ 35 mins + 4–6 hrs chill
🍽️ Sculptural Jelly

🛒 INGREDIENTS

• 300 ml lychee juice
• 150 ml pineapple juice
• 80 ml blueberry juice
• 350 ml water
• 70 g honey or sugar
• 28 g gelatin
• Turquoise, fuchsia, golden yellow & cobalt natural color infusions

🍳 EQUIPMENT

• Tall cylindrical silicone mold
• 4 piping bags
• Small saucepan
• Thin central rod

📖 INSTRUCTIONS

Bloom gelatin, then dissolve it with warm water, honey, lychee and pineapple juice.
Divide a small amount into 4 portions and tint turquoise, fuchsia, golden yellow and cobalt.
Place a thin rod vertically in the center of the mold to create the empty channel.
Pipe ultra-thin colored ribbons diagonally around the rod, alternating colors and spiral angles.
Add clear jelly between layers to lock the ribbons in place.
Chill until completely set, remove the rod, then unmold.
Rotate under directional light for the frozen-whirlpool illusion.

💡 PRO TIP

Keep the ribbons extremely thin and the center perfectly empty. The transparent jelly and different spiral angles create the movement illusion.

ℹ️ SERVING INFO

Serve cold on a clear or mirrored plate and slowly rotate before serving.

BERRY CHECKER HEART 🫐❤️✨

⭐⭐⭐ MODERATE
⏰ 30 mins + 4 hrs chill
🍽️ Sculptural Jelly Dessert

🛒 INGREDIENTS

• 180 g raspberry puree
• 150 g blueberry puree
• 200 g Greek yogurt
• 300 ml water
• 25 g gelatin
• 45 g honey
• Natural raspberry, blueberry, pink & crystal tones

🍳 EQUIPMENT

• Small spatula

📖 INSTRUCTIONS

Bloom the gelatin in cold water.
Warm the remaining water with honey, then dissolve the gelatin completely.
Divide the mixture into raspberry, blueberry and Greek-yogurt jelly bases.
Pour thin alternating raspberry and blueberry strips into a shallow mold, creating small geometric blocks. Chill until firm.
Cut the set jelly into tiny equal cubes and carefully arrange them into a checkerboard pattern inside the heart mold.
Pour the pink and crystal jelly mixture around the checker pattern until the heart is completely filled.
Chill for about 4 hours until fully set.
Unmold carefully and slice directly through the center to reveal the hidden checker pattern.

💡 PRO TIP
