Prepare the chimichurri sauce by combining the chopped parsley, minced garlic, lime juice, olive oil, red w**e vinegar, oregano, red pepper flakes, salt, and black pepper in a small bowl. Stir well and set aside for at least 10 minutes to allow the flavors to develop. 2\. Pat the steak dry with paper towels. Rub it with olive oil, minced garlic, salt, black pepper, smoked paprika, and dried oregano. 3\. Heat a grill pan or heavy skillet over medium-high heat. Cook the steak for approximately 4–6 minutes per side, depending on its thickness and desired doneness. For food safety, cook whole beef steaks to an internal temperature of 145°F (63°C), then let them rest for at least 3 minutes. 4\. Transfer the steak to a cutting board and let it rest for 5–10 minutes. Slice it against the grain into thick strips. 5\. Heat the butter or olive oil in a nonstick skillet over medium heat. Crack in the eggs and cook until the whites are set and the yolks reach your preferred consistency. Season with salt and black pepper and sprinkle with chopped parsley. 6\. Arrange the sliced steak on a large serving platter. Spoon the chimichurri sauce generously over the steak, reserving some sauce for serving. 7\. Place the fried eggs beside the steak. Arrange the sliced avocado, dragon fruit, blackberries, and lime wedges around the platter. 8\. Serve immediately with the remaining chimichurri sauce and fresh lime wedges.
