High Performance Cookers At High Performance Cookers we build outdoor cookers and accessories based on our Patent Pending Tunnel Tube technology, that perform for you above all else!

Our products are built by hand all right here in USA. High Performance Cookers is based in southern Louisiana near New Orleans. The NOLA life provides experiences in crabbing, fishing, camping, hunting and many other outdoor adventures. Our owners & creators grew up loving the great food of the south and particularly the great seafood harvested in our Louisiana. It was out of this love that a passion grew to create the best crawfish boil cooker possible - this life is how High Performance Cookers was founded. After that first great creation, we grew to create other cookers, from boiling to slow cooking to steaming and frying. We created a product for every need! We also tried to make our products multi-use. By developing accessories for each product line, we allow our customer's purchases to go far and satisfy the every need. Whether you are looking to host a great sports tailgating party, race day, entertain in your own backyard, camping at a park or at the beach; with our Cookers you will always be ready to deliver that great southern Louisiana cooking and all from your very own High Performance Cooker!

Word of Mouth Thursday.

Jessie T, on the 30 QT Turkey Fryer:

"30qt turkey cooker is LEGIT. Heated up in about 10 minutes with a cold breeze blowing. Only dropped about 20 degrees after turkey went in and was back to 350 after 5-6 minutes."

Thanks, Jessie. A cold breeze is the real test for a turkey fry, and November has plenty of them.

If you're frying a bird this Thanksgiving, our Turkey Fry Kit is the 30 QT turkey fryer with a turkey rack, 12" thermometer, wind shield and skimmer, hand-welded in Louisiana. Order by Monday, November 23 to have it for Thanksgiving: https://highperformancecookers.com/pages/turkey-fryers

How-To Wednesday.

Which part fits which pot? The turkey-season cheat sheet.

THERMOMETERS. The 5" is the one for the 18 QT. The 12" is the one for the 30 QT turkey fryer, and for the 60 QT Dual too.

RACKS. The single rack fries one bird and is built for the 30 QT. The dual rack fries two and fits the 60 QT. The single will work in a 60 QT if you only want one bird.

WIND SHIELD. It's for a pot sitting on the ground, powered cookers 60 QT or smaller. It's not for a fryer standing on leg extensions.

Save this one for fry day. Got a fitment question? Send us a message.

Shop Floor Tuesday.

Sparks, a torch and a pot bottom.

Every tunnel tube on every pot we sell is welded by hand in Louisiana. When you set one of our pots on the fire, it started right here, with somebody who does this all day.

Built here. By hand.

Perfect wings in the 18 QT.

Flats or drums? Choose carefully. One of these guys thinks drum people have something wrong with them.

The 18 QT Fish Fryer gets to 350° in under 5 minutes. The Tunnel Tubes are hand-welded across the bottom of the pot, so the heat spreads over the whole base instead of one spot. Lift the basket, shake off the oil, let the paper towel take the rest.

He says there's one more thing he wants to cook in it. What should go in the 18 QT next?

Times vary with volume, ambient temperature and fuel pressure.

Boil Math Monday.

Nobody at the table asks how long the oil took.

For the record: 350° in under 10 minutes on the 30 QT Turkey Fryer. That's the Tunnel Tubes, hand-welded across the bottom of the pot so the heat covers the whole base.

Who's carving at your house this Thanksgiving?

Friday Fire.

Fry something that isn't dinner.

Funnel cake, powdered sugar, Friday night with a ball game on. Same oil, same burner, different ending.

A fryer doesn't care what month it is. Fish, wings, hushpuppies, okra, and every now and then something that has no business being in hot oil at all.

What's going in yours this weekend?

Word of Mouth Thursday.

Russell left this after picking up his 120 Quart Powered Cooker:

"Well designed, well packaged. I bought in the off season so I haven't done a boil yet. However, the attention to detail on the burner itself is impressive. The 120 qt basket fits snug against the pot. (No crawfish leakage). Love the lid hook to hang top on pot. HP Cookers rep met me after hours in mandeville at their shop for my pick up. THATS CUSTOMER SEEVICE. Buy with confidence."

A lid hook and a basket that actually fits are the kind of thing you only notice if you've wrestled a pot that had neither. Thanks, Russell.

How-To Wednesday.

Ever wonder why our times always say "about"?

Because four things decide how fast your pot gets hot, and three of them belong to you.

VOLUME. More water takes more minutes. Fill the pot for the crowd you've got, not up to the rim.

WEATHER. A cold morning with a breeze on it will cost you. Keep the lid on until it boils, and put something between the wind and the flame. Our wind shield is built for a pot sitting on the ground — powered cookers 60 QT or smaller.

FUEL. Propane pressure drops as the tank empties and as the air gets cold. Start a big cook on a full tank, not the one that's been sitting out back since spring.

The fourth one isn't yours, and that's the point. The tunnel tubes are welded across the bottom of the pot, so the burner's heat gets spread over the whole base every single cook. Same in July, same in January.

We'd rather tell you what moves the clock than pretend nothing does.

Times vary with volume, ambient temperature and fuel pressure.

Boil Math Monday.

Two sacks. Forty people. One pot.

That's the math on the 120 QT Powered Cooker. No second rig, no second burner going in the yard. One pot, batch after batch, while the line at the table keeps moving.

The tunnel tubes are welded across the bottom of the pot, so the heat spreads over the whole base every batch.

What's the biggest crowd you've fed off one pot?
