🥘 Recipe Review: Champion Chilaquiles! 🌶️
This week, kids in Sticky Fingers Cooking classes coast to coast whipped up a traditional Mexican breakfast recipe: Terrific Tomatillo Chilaquiles!
First, our kid chefs chopped fresh tomatillos, green onions and garlic cloves. With Chef Instructor help, kids cooked the onions until soft and slightly browned, about 3 minutes, then added sugar and garlic and cooked a bit more. Then our chefs added the chopped tomatillos and vegetable stock and simmered the mixture until it got thick.
If chefs used eggs, they gently scrambled the eggs until set, then removed the eggs and set them aside. If chefs used tofu, kids crumbled the tofu and combined it with the tomatillo sauce in the skillet from earlier. Then kids added salt and mild chili powder to the eggs or tofu.
Kids then threw in 2 to 5 big handfuls of tortilla chips and stirred gently to coat the chips with the sauce. Then kids added the scrambled eggs (if used), along with some extra salt and black pepper to taste. Our chefs heated the dish for a few minutes until the tortilla chips just began to soften. Kids served the chilaquiles with selected toppings. "Comer bien mis amigos" or "Eat well my friends" in Spanish!
A few fun quotes from this week:
💬 “If it’s got chips in it you know it’s gonna be good!”
💬 “My favorite part is making the meal look pretty before we eat!”
💬 "Horchata is life!"
To wash it all down, our kid chefs made Super Speedy Horchata! First, our kid chefs added water to a pitcher, then measured and added in rice flour, vanilla extract, and cinnamon. Kids whisked the mixture and then added in more water. Lastly, kids poured in sweetened condensed milk. After mixing well, kids served over ice. "Salud" (Sah-lood) or "Cheers" in Spanish!
✨ Flavorful, fast, and seriously satisfying - this week’s recipe reminded us how fun it is to explore world cuisines, one bite at a time!
