Ingredients
For the Creamy Mango Jelly:
* 2 cups whole milk (480 ml)
* 1 cup heavy cream (240 ml)
* ½ cup sweetened condensed milk (120 ml)
* ⅓ cup granulated sugar (65 g), or to taste
* 2 teaspoons vanilla extract
* 3 tablespoons unflavored gelatin powder (about 27 g)
* ½ cup cold water (120 ml), for blooming the gelatin
* 1 cup mango purée (240 ml), preferably from ripe mangoes
* 1½ cups ripe mango slices, thinly sliced
For Decorating:
* 1 large ripe mango, peeled and sliced into thin wedges
* A little neutral oil, for lightly greasing the pan
Preparation Steps
1. Prepare the Baking Dish
Lightly grease a 9 × 13-inch rectangular baking dish with a very thin layer of neutral oil.
Arrange several mango slices across the bottom of the dish in neat decorative patterns. These will become the beautiful fruit designs visible on top when the dessert is inverted.
2. Bloom the Gelatin
Pour the cold water into a small bowl and sprinkle the unflavored gelatin evenly over the surface.
Allow it to sit for 5–10 minutes until the gelatin absorbs the water and becomes soft.
3. Prepare the Creamy Milk Mixture
In a medium saucepan, combine the whole milk, heavy cream, sweetened condensed milk, and granulated sugar.
Heat over medium-low heat, stirring continuously until the sugar dissolves and the mixture becomes warm.
Do not allow it to boil.
4. Dissolve the Gelatin
Add the bloomed gelatin to the warm milk mixture.
Stir gently for 2–3 minutes until the gelatin dissolves completely and the mixture is smooth.
Remove from the heat and stir in the vanilla extract.
5. Add the Mango Flavor
Allow the milk mixture to cool until lukewarm.
Add the mango purée and whisk gently until everything is evenly combined.
The mixture should have a pale golden-yellow color and a smooth, creamy consistency.
6. Assemble the Dessert
Carefully pour a thin layer of the creamy mango mixture over the mango slices in the prepared dish.
Refrigerate for approximately 15–20 minutes, just until the slices are held in place.
Gently pour in the remaining mango jelly mixture.
Add a few extra mango pieces throughout the dessert if desired.
7. Refrigerate Until Firm
Cover the dish and refrigerate for at least 5–6 hours, preferably overnight, until the dessert is completely set.
The jelly should be firm enough to cut into clean squares while remaining soft and creamy.
8. Slice and Serve
For the decorative mango pattern shown in the photo, carefully invert the fully chilled dessert onto a flat serving tray so the mango slices face upward.
Using a sharp knife dipped in warm water, cut the dessert into evenly sized squares.
Serve immediately while cold.
Helpful Tips
* Use ripe, sweet mangoes for the best natural flavor.
* Avoid boiling the gelatin mixture, as excessive heat can affect the final texture.
* For a lighter dessert, replace the heavy cream with additional whole milk.
* Chill the dessert thoroughly before cutting to achieve smooth, clean edges.
* Keep leftovers covered in the refrigerator for up to 3 days.
